Chakli is an all time favourite crunchy, tasty and protein rich snack which is enjoyed by all. Be it festivals, occasions celebrations, parties, Chakli adds a a special attraction to the menu. Traditionally, it's made with a flour of mixed lentils, millets and spices
I have prepared an instant recipe using rice and roasted chana. It's also called Murukku in southern India.

Ingredients and spices that need to be Take to make Chakli / Murukku:

  1. 2 cups Rice (soaked for 4 hours, drained and dried in shade)
  2. 1 cup Roasted chana (Futani)
  3. 1 tablespoon Sesame seeds
  4. 1/2 tsp Ajwain
  5. 2 tablespoon Butter
  6. 1 tsp Chilli powder
  7. 1/2 tsp Turmeric powder
  8. 1/4 tsp Hing
  9. 1/2 tsp Cumin powder
  10. 1 tsp Coriander powder
  11. as per taste Salt
  12. as required Warm water to mix dough
  13. as needed Oil to fry

Instructions to make to make Chakli / Murukku

  1. First, powder the soaked and dried rice to a fine powder. Then grind roasted chana to fine powder. Sieve all the dry powders in a bowl. Add the sesame seeds, ajwain, salt, melted butter and mix till well combined.
  2. Then add warm water and mix to a firm dough. Keep covered with a damp cloth for 15 minutes.
  3. Then keep the oil to heat on medium flame in a kadhai. Grease the Chakli maker with oil. Insert the Chakli plate with star shaped hole inside the Chakli maker.
  4. Then take a ball sized portion of the dough and roll it well between palms till smooth. Place it inside and press firmly. Then cover the Chakli maker with its top cover, close it tight.
  5. Make small square pieces of aluminium foil or a plastic sheet. Grease with oil. Press chaklis in round and spiral shapes on each piece.
  6. Gently insert in hot oil and fry on low medium flame till both sides are crispy and golden.(Do not flip till base is fried firm otherwise it will brake.)
  7. Similarly, prepare all the chaklis and serve with favourite chutney, ketchup, pickle or curd. Store them after cooling, in an airtight glass or steel box for 2 to 3 weeks. Enjoy.
