- 1 tsp coriander powder
- 1 tsp Kasuri methi
- 2 tbsp coriander leaves
- 1 tsp gram masala powder
- As needed Salt and oil

- Dry roast the whole spices in a pan for 1-2 minutes. Switch the flame off. Cool it. Make a coarse powder of roasted spices in a mixer jar.

- In a pressure cooker boil the potatoes for 5 minutes or until it become soft. Peel the skin and cut into small pieces.
- Heat mustard oil in a karahi. Add 1/2 tsp of cumin seed and hing. After a few second add grated ginger. Stir. Add chopped tomatoes and green peas. Stir.
- Now add salt, turmeric powder, coriander powder, chilli powder, garam masala powder and kasuri methi. Cook for 2-3 minutes on medium flame.
- When tomatoes are soft and oil realises in the pan add boiled potatoes and green chilli. Cook for 2 minutes. Add water. Boil for 2-3 minutes. Switch the flame off.
- Garnish with chopped coriander leaves. Serve with matar kachori.
