- For preparing the dough:
- 1.5 cup all purpose flour
- 1 tsp kalonji

- 2 tsp oil
- as required Water to knead a dough
- For stuffing :
- 1 tsp punch phoran
- 1 tsp ginger garlic chilli paste
- 3 medium sized chopped potatoes
- 1/4 cup green peas
- 3-4 tsp roasted peanuts
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- 1/2 tsp garam masala powder
- as per taste Salt
- 1 tsp kasoori methi
- 2 tsp mustard oil
- for slurry:
- 1 tsp all purpose flour
- 2 tsp water
- as required Oil for deep frying
Instructions to make to make Shingda
- For stuffing : Heat a Kadhai with oil and add punch phoran in it.
- When the mustard in the punch phoran crackle then add add chopped onion in it.
- When the onion becomes transluscent then add the ginger garlic chilli paste in it and when the raw smell of the onion has gone then add the chopped potatoes and green peas in it.
- Then add the turmeric powder, chilli powder, salt, mix it well and cover it for sometime.
- Then add the roasted peanuts and garam masala powder and cook it again for sometime.
- Atlast add the kasoori methi in it, mix it well and switch off the flame and now the stuffing is ready.
- Now mix all the ingredients for making the dough. Mash it with your hand to make khasta and then slowly add water in it and make a smooth dough.
- Now make small balls from the dough and then make thick chapati from it and cut it from the middle.
- Then with the help of your finger tip brush the slurry on the sides of it.
- Now make funnel like shape and put the stuffing in it and close it.
- Now heat oil in a Kadhai and deep fry the shingda till golden brown in colour.
- Now your Shingdas are ready. Serve hot ketchup.
