Bhakarwadi is a traditional crispy, deep fried, disc-shaped, sweet and spicy snack that is popular in the western states of Gujarat and Maharashtra in India.

- For preparing dough:-
- 1 cup maida
- 2 tbsp besan
- 1/4 tsp turmeric powder
- pinch hing
- 1/2 tsp salt or as per taste
- 2 tbsp oil (hot)
- as required water for kneading
- For Bhakarwadi stuffing/filling:-
- 1/4 cup desiccated coconut
- 1 tsp fennel seeds
- 2 tsp sesame seeds
- 1 tsp poppy seeds/ khus khus
- 1/4 tsp turmeric powder
- 1/2 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp kashmiri red chilli powder
- pinch hing
- 1/2 tsp aamchur powder
- 2 tsp sugar
- 1/2 tsp salt or as per taste
- 1/4 tsp garam masala
- as required little water for greasing
- as required Oil for deep frying
Instructions to make to make Bhakarwadi
- In a large bowl, add maida, besan, turmeric powder, hing, salt and mix well with a spoon.
Next add hot oil. Let oil cool down little. Then with yours fingers rub the flour. Take a small quantity of flour and press it. It must hold shape when pressed between fist and not crumble. - Then add water as required. Knead to a smooth and tight dough. Apply tsp of oil all over the dough. Cover and keep aside dough for 20 mins.
- To prepare stuffing:-
On low-medium flame, heat nonstick pan and roast sesame seeds for 2 mins.
Then add desiccated coconut, poppy seeds, fennel seeds in it. Sautē for 2 to 3 mins till coconut is lightly golden. Switch off the gas. Remove the pan from heat and put it down. - Now add all spices- red chilli powder, coriander powder, cumin powder, amchur powder, garam masala, salt in the pan and mix well.
- Let the mixture cool down completely before grinding in a mixer jar. Add sugar in the mixture and grinds it to make a slightly coarse powder. Then remove it into the bowl and keep aside.
(Check taste and if required add more spices, salt, sugar powder accordingly.) - Now take dough and knead it to semi soft dough. Divide into two equal round ball.
Grease the rolling base and rolling pin with oil. Place dough ball on rolling board. Roll into round / square shape slightly thicker than chapati. - Lightly brush with water on square/round shapes. Spread the stuffed masala, leaving the edges. You can also brush with tamarind chutney instead of water.
Then lightly press the stuffing masala with a spoon. Apply water to the edges and seal the edge while rolling. - Roll slowly making sure there is no gap, else bhakarwadi will fall apart while frying.
Cut the rolled log into equal parts. Place pinwheel surface facing upwards and gently press with heels of your palm. - Heat oil in a kadai on medium flame. Deep fry Bhakarwadi on low heat until golden brown and crunchy. Remove on a absorbed paper.
- Once cool, store them in an airtight container.
Serve Bhakarwadi as snack with tea.
