  12. 2 finely chopped green chilly
  13. 1.5 tsp ginger + garlic paste
  14. 1/2 tsp turmeric powder
  15. 1/2 tsp garam masala
  16. 1 tsp amchoor powder
  17. 1 tsp Corriandar - cumin powder
  18. 1/2 tsp red chilly powder
  19. 1/2 tsp salt
  20. 4 midium size boiled potatoes
  21. 1/2 cup boiled green peas
  22. 2 tsp cashew nuts pieces
  23. 2 tsp raisins
  24. 4 tbsp finely chopped green coriander leaves
  25. 4-5 finely chopped mint leaves
  26. Oil for deep frying as per required

Steps to make to make Punjabi Aloo Samosa

  1. First we will make flour for the layer of samosa. In a large bowl, add all purpose flour, salt and carom seeds and mix it. Now make a little pit in the flour, add ghee in it, mix it well and make a texture of the flour that falls by hand. Now add a little bit of water and knead the dough. Now put a little oil on the flour and cover it with a lid and eave it for 30 minutes.
  2. Now we will make the stuffing for the samosa. For this, heat oil in a pan, add whole dried coriander and fennel seeds in a grindstone, add cumin seeds and fry till the color of coriander and fennel seeds changes on slow gas flame.
  3. Now add finely chopped green chillies, ginger + garlic paste and saute for a while. Add turmeric powder, garam masala, amchoor powder, coriander cumin powder, red chilli powder and salt and saute for 1 minute on low gas flame.
  4. Now add boiled potatoes (mash by hand and add), boiled green peas and part of the green peas salt and mix. Now add cashew nuts and raisins and mix well.
  5. Now add green coriander leaves and mint leaves, then turn off the gas heat and mix it. Then Set aside to cool.
  6. Now make a uniform paste of the flour we have made and weave it like bread. Now cut this bread from the middle, hold one end as shown in the photo, apply water and stick the other end on top.
  7. Now put 2 teaspoons of stuffing in it, apply water on the border, first press it from the middle and stick it on the side to give the shape of samosa. (If you don't stick the samosa layer properly, there is a risk of opening the samosa while frying in oil)
  8. Now heat oil on slow gas in a pan to fry samosas, add samosas and fry all samosas golden on slow gas. (If you fry the samosa only on the flame of slow gas, the layer of samosa will become crispy and firm like farsan and also heat the oil on slow gas only, do not heat on high gas)
  9. Now a very crispy Punjabi aloo samosa like our farsan shop is ready to serve. Serve this samosa with tomato ketchup or coriander mint green chutney with fried green chillies.
