  3. 2 tbsp rice flour
  4. 1.5 tbsp salt
  5. 2 tbsp oil for moin

  9. 1 tbsp cumin seeds
  10. 2 finely chopped green chilly
  11. 7-8 sweet curry leaves

  14. 1/2 tsp turmeric powder
  15. 1 tsp red chilly powder
  16. 1 tsp garam masala
  17. 4 midium size boiled and smashed potatoes
  18. 1 tsp roasted cumin powder
  19. 1 tsp amchoor powder
  20. 1/2 tsp black salt powder
  21. 1/2 tsp salt
  22. 1/2 cup finely chopped green coriander leaves
  23. Ghee as per required
  24. 👉 For Garnishing :--
  25. Chopped green onion
  26. Butter as per required

Instructions to make to make Punjabi Aloo Paratha

  1. First we will make dough for paratha. In a large bowl, add wheat flour, rice flour, oil and salt and mix well. Now add little by little water to the flour and make dough. Then take a little oil in hand and knead the flour. Now apply a little oil on the flour, cover and rest for 10 to 15 minutes.
  2. Now let's make a stuffing for aloo paratha. For this, heat oil in a pan, add cumin seeds and then add chopped green chillies, chopped sweet curry leaves and chopped onions and saute on medium flame for 2 to 3 minutes.
  3. Now add ginger-garlic paste, cook for 1 minute, add turmeric powder, red chilly powder and garam masala, mix and fry for 1 minute. Do it. Then mash the boiled potatoes and cook on medium heat for 2 to 3 minutes.
  4. Then add roasted cumin powder, amchoor powder, black salt powder and salt and mix. Then add chopped green coriander and mix well. Turn off the gas flame and let the mixture cool down.
  5. Now make balls of potato mixture. Then mix the paratha flour well and divide it into equal parts.
  6. Now weave a loaf of flour like a big puri, fill it with potato stuffing, pack it from the edges of the puri, press it all around and apply dry flour and lightly weave paratha. Then heat the frying pan, apply ghee on it, add paratha, apply ghee on top and fry on both sides on medium gas flame. Fry all the parathas in this way.
  7. Now this yummy aloo paratha is ready to serve. Transfer the paratha to a serving plate, separate the edges from the knife and garnish with green onions and butter. This aloo paratha can be served with pickles, masala yoghurt, tomato ketchup or green coriander mint chutney.
